Chef de Cuisine at Park Hyatt Melbourne’s radii restaurant, Craig Sung, is making waves behind-the-scenes with his strong farm-to-table approach when it comes to the food he chooses to serve.

Born and raised in Canada, Craig started out at a local restaurant in his hometown, Vancouver, where his interest in food began to manifest into something bigger. Since then, Craig has never looked back, and has been working in top hotels before finally setting his roots in Melbourne, Australia at Park Hyatt Melbourne.

A keen supporter of the farm-to-table movement, Craig incorporates this ethos into every dish which comes out of his kitchen, often choosing to go directly to the source, working with local suppliers to understand how the ingredients he uses are made, as well as the processes involved in supporting its cultivation.

Often taking inspiration from the land’s bounty to craft his food. Craig’s belief that food should be served simply and elegantly has played a pivotal role in his skill for extracting the best flavours out of simple ingredients which he incorporates into radii restaurant’s seasonal menus.
